Easy Macaroni and Cheese Meals

In Step 4, the macaroni mixture is cooked over medium-low heat so the cheese won't become stringy and the sauce, grainy.
Yield: 8 servings (serving size: 1 cup)
Ingredients
3  cups  halved cherry tomatoes
Cooking spray
1/4  teaspoon  black pepper
3  ounces  sourdough bread, torn into pieces
1  teaspoon  butter, melted
12  ounces  large elbow macaroni
2 cups  (8 ounces) shredded extrasharp cheddar cheese
1/4  cup  egg substitute
1 1/2  teaspoons  kosher salt
1/4  teaspoon  ground red pepper
1  (12-ounce) can evaporated low-fat milk
Preparation
Preheat oven to 375°.
Place tomatoes in a 13 x 9-inch baking dish coated with cooking spray. Sprinkle with black pepper. Bake at 375° for 30 minutes or until browned, stirring occasionally.
Whiletomatoes cook, place bread in a food processor; pulse 2 times or until crumbly. Toss crumbs with melted butter. Sprinkle the crumbs on a baking sheet, and bake at 375° for 12 minutes or until golden, stirring frequently.
Cook macaroni in boiling water 7 minutes; drain. Return macaroni to pan; place over medium-low heat. Add cheese and remaining ingredients; cook 4 minutes or until cheese melts,stirring constantly. Stir in tomatoes. Sprinkle each serving with about 3 tablespoons breadcrumbs.

10 Cheesy Chicken Casseroles

You can cover and refrigerate the casserole overnight, and sprinkle with cheese before baking. Bake at 350° for 25 minutes until bubbly.

Ingredients
9  ounces  uncooked spaghetti
Cooking spray
1  cup  frozen chopped onion
1  tablespoon  bottled minced garlic
2 (14.5-ounce) cans stewed tomatoes, undrained and chopped
1  tablespoon  low-sodium Worcestershire sauce
2  teaspoons  dried Italian seasoning
1/4  teaspoon  salt
2  cups  (8 ounces) shredded reduced-fat Cheddar cheese, divided
3  cups  frozen chopped cooked chicken, thawed
Preparation
Preheat oven to 350º.
Cook pasta according to package directions, omitting salt and fat. Drain.
Coat anonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and garlic; sauté 5 minutes. Add tomatoes, Worcestershire sauce, seasoning, and salt; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes. Stir in 1 cup cheese, cooked spaghetti, and chicken. Spoon into a 3-quart casserole coated with cooking spray. Sprinkle with remaining 1 cup cheese. Bake at 350ºfor 15 minutes.

Make it Meatloaf for Dinner

Combining three types of ground meat lends more depth to the overall flavor of this meat loaf recipe. Serve with roasted carrots and onions.
Yield: 6 servings (serving size: 2 slices)
Ingredients
1  (1 1/2 ounce) slice white bread
2  tablespoons  fat-free milk
1/2  cup  ketchup, divided
2/3  pound  ground beef, extra lean (raw)
1/2  pound lean ground veal
6  ounces  lean ground pork
1/2  cup  chopped onion
1/3  cup  chopped fresh parsley
1  tablespoon  Dijon mustard
1  teaspoon  dried basil
3/4  teaspoon  salt
1/4  teaspoon  black pepper
2  large egg whites

Preparation
Preheat oven to 350°.
Place bread in a food processor; pulse 10 times or until coarse breadcrumbs measure 1 1/2 cups.
Combine breadcrumbs andmilk in a large bowl; let stand for 5 minutes. Add 2 tablespoons ketchup and remaining ingredients except cooking spray.
Shape meat mixture into a 9 x 5-inch loaf on a broiler pan coated with cooking spray. Spread remaining 6 tablespoons ketchup over top of meat loaf. Bake at 350° for 1 hour or until a thermometer registers 160°. Let stand for 10 minutes. Cut the loaf into 12 slices.

Rubchicken breasts under the skin with the spice paste, and grill for a simple, delicious late-summer dinner. Leave the skin on the chicken as it cooks so the breasts will remain juicy, and discard skin just before serving.
