RESUMEN

Estamemoria posee su esencia, en presentar al sector Agroindustrial las actuales herramientas de Dirección empresarial; específicamente, aplicadas en la Bodega de Licores Quinta Normal perteneciente a la Universidad de Chile. El objetivo general es desarrollar un modelo integrado de Gestión, que permita tomar decisiones de planificación estratégica y de agregación de valor, para el desarrollo de ventajascompetitivas en la Bodega de Licores Quinta Normal. La primera herramienta utilizada fue Gestionar la Cadena de Suministro de la bodega, a partir de los distintos procesos logísticos que la constituyen. La segunda herramienta utilizada fue la elaboración del Tablero de Mando, constituido por cuatro aspectos de desempeño: Financiero, Operacional, Cliente y Recurso Humano. Los resultados obtenidosdemuestran que con la estructura administrativa y de toma de decisiones que posee la bodega actualmente; en el corto plazo, es inviable la estabilidad financiera como una unidad rentable de la Facultad de Agronomía. Se concluye, refundar la misión actual; para implementar el Plan Estratégico propuesto, a partir del registro de los aspectos operativos logísticos, para que sean dirigidos ycontrolados por el Tablero de Mando. SUMMARY

This memory possesses its essence, in presenting to the Agroindustrial sector the current tools of Management; specifically, applied in the Cellar of QuintaNormal Liquors belonging to the University of Chile. The general objective is to develop an integrated model of Administration, that allows to make decisions of strategic planning and of aggregation of value, for the development of competitive advantages in the Cellar of Quinta Normal Liquors. The first used tool it was to Supply Chain Management of the cellar, starting from the different logisticalprocesses that constitute it. The second used tool, it was the elaboration of the Scorecard constituted by four acting aspects: Financial, Operational, Client and Human Resource. The obtained results demonstrate that with the administrative structure and of taking of decisions that it possesses the cellar at the moment; in the short term, it is infeasible the financial stability as a profitable unitof the Ability of Agronomy. To finish, to reconstruct the current mission; to implement the proposed Strategic Plan, starting from the registration of the logistical operative aspects, so that they are directed and controlled by the Scorecard.
