Fats and oils in its pure form, are exclusively made up of triglycerides, which in turn are composed of fatty acids with glycerol; Therefore, acids represent a large percentage of the composition oftriglycerides, and consequently of the fats and oils.

Originally, these acids were given the name of acidic monocarbocilicos of aliphatic chain with even number of carbon atoms, which may besaturated or unsaturated.

Currently the fats have biological roles, from forming the basic structure of our cells to energy storage; some of these fats tend to be good, while some are not. Saturated fatstend to come from animals sources and their consumption in large quantities is bad for our health; there are some others, with the name of trans fatty acids, which have been partially hydrogenated.Unsaturated fats are good fats, which include mono and polyunsaturated fatty acids. The omega fatty acids belong to this family of fats, which are divided in: omega-3, omega-6 and omega-9.

Due tohis unsaturation, these compounds have a high chemical reactivity, since they are prone to saturation and changes of oxidation and isomerization. This type of fatty acids found in the nature, sincethis provided us abundant sources such as marine, and vegetable oils among others showing below:

- Omega-3 fatty acids found in flaxseed and fish oils.
- Omega-6 fatty acids found in the oils ofcorn, sunflower, soy and avocado, and also found in nuts and eggs.
- Omega-9 fatty acids found in oil of olive.

People today consuming this type of fatty acids, in particular larger amounts ofomega-3 are healthier, because these fatty acids prevent diseases, such as heart attacks, high blood pressure, and depression, among others.

Today should have a greater awareness about the consumptionof these fatty acids, since if we consume them in the right amounts, saturated fats are discarded by the unsaturated fats, and so will be able to have our life better quality, which consumes these...
