Papas a la Huancaina - Potatoes with Huancaina Sauce
 
10 medium potatoes (new potatoes are best)
1 pound of cheese (white "Fresco" mexican cheese works ok, but you could use Feta cheese for a"stronger" flavor)
2 small hot peppers (yellow aji mirasol works best but you could use de yellow mexican chile too)
1 cup evaporated milk
1/2 cup vegetable oil
1 garlic clove
8 saltine crackerssalt and pepper
lettuce
3 hard cooked eggs
black olives

Cook and peel potatoes and allow to cool.
In a blender, blend the cheese, peppers, milk, oil, garlic, crackers, salt and pepper.The sauce should be fairly thick; add crackers if not thick enough, add milk if too thick.
 
Lay a bed of lettuce in a serving dish and place the potatoes on top. Cover with the sauce. Cut the hardboiled eggs in half and place on top of the potatoes. Add black olives if desired.
 
This dish can be served slightly cold.

|TURKEY LOAF |
1 1/2 lbs. fresh ground turkey
8 oz. sour cream
1 tbsp. salt
1 tbsp. ground pepper
1 tbsp. Worcestershire sauce
Fine ground bread crumbs
1 whole egg
Small cup of chopped freshbasil leaves
1 tsp. pepper or hot sauce (optional)
1 1/2 jar of pimentos, chopped
1 medium onion, chopped
1 tbsp. extra virgin olive oil
Your favourite barbecue sauce or ketchup |
Pre-heat ovento 350 degrees. In a skillet or frying pan, cook onion and pimento with olive oil over medium-high heat until the onion is soft. This will take about 10 minutes. Set aside. This mixture becomeswhat’s called sofritto. In a mixing bowl, combine remaining ingredients. Then, add onion and pimento sofritto. |
Butter or grease a 2 litre loaf pan or other rectangular baking dish, and then spread 2tablespoons of your favourite barbecue sauce or ketchup on the bottom of the baking dish. Add turkey. Spread evenly and repeat with a thin layer of barbecue sauce/ ketchup over the top of the meat....
