A dream came true in “Puriscaleños” hands…

Wine has a long history, and individual bottles of wine can have their story too. These two aspects add significance to wine's fascination, but wine's place in our cultural history is a larger theme. Wine was one of the first things that Man created, and it has held a special place in many cultures. Now, wine is produced by Puriscal (County in CostaRica) persons in the only one wineyard that exists in Central America, which is located in Puriscal too, believe it or not…
HISTORY
Nobody knows from which particular part of the world the grape wine originally came, but man has been drinking wine with his food for at least 5,000 years and the ages of the custom goes back far beyond the days of ancient Greece to Egypt and the early civilizationsof the East.
The sacrificial wine which was offered as a tribute to pagan gods became the sacramental wine of the early Christian church.
Bottles of wine were found nearly all around the world, and we can find data almost everywhere: The Bible, music, books and pictures. Since a nun from a terrorist, presidents and slaves, Christians and pagans; all of them have enjoyed a glass of wine sometimeor have a story to tell that involve this drink somehow.

The past of wine is also an intriguing story of technical innovation, as Man applied his intelligence to the problems posed by the first chemical reactions that he encountered: fermentation and oxidation.
Who was the first to drink this intoxicating and charming juice? We can never know, but perhaps he or she also had the first wineinduced headache.
When we contemplate the wine in our glass we are looking at the oldest known agricultural product in the world.

What’s a wine?
What do you think it’s a wine?
Wine is the fermented juice of grapes. The grape is the one fruit that, with its concentrated sugars and ample juice, has an inherent tendency to ferment. Fermentation makes alcohol, and this will take place when thegrapes are grown and the juice released comes into contact with yeast there in plenty, in wild form, on the skins of the grapes. So if the grape juice is held in a container, wine will make itself.
The color of red wines comes from the skin, not the juice. The juice is normally colorless, though some varieties have a pink to red color. Juice flavors vary from bland to strong.
Wines are also madefrom fruits other than grapes. Fermented apple is considered a wine. There are also cherry wines, plum wines, and wines made from various berries. Many fruit wines are home-fermented products, but some are manufactured commercially as well.
Most wines contain about from 12-20 percent of alcohol.

PROCESS
Wine Making
The diversity and quality of wine results not only from the kinds of grapesgrown but from distinctive qualities of soil, topography, and climate In addition, each vintner or community of wine makers may have techniques that no one else knows or uses.
All wines are made in a similar way, with variations depending on the type to be produced. The steps are: harvesting, crushing, juice separation, treatment of the mass of crushed grapes and juice (called the must),fermentation, post fermentation treatment, clarification, aging, and bottling.
Fermentation takes from ten to 30 days. During the process, temperature control is necessary to extract the flavors and colors from the skins (if skins are fermented). The suspended particles must be removed by clarification in any one of several processes.
Wine is usually aged in wooden containers made of oak or redwood. Thewood from the containers also contributes flavor. The wood-aging process may last many months or several years, depending on the wine and the quality desired.
Before bottling, wine may require blending, filtration, and the addition of an antiseptic agent to prevent microbe development. Some wines are aged in bottles before being sold. Red wines especially may profit from two to twenty years of...
