Abisante
Dubbed the FéeVerte ('The Green Fairy'), this drink is a faint anise flavor with a bitter substance complex dyes due to the contribution of other herbs. When coldwater is added, the drink becomes milky louche essence. It began as an elixir in Switzerland, but which was made popular in France because of theassociation between romantic writers and artists who took the drink in Paris in the late nineteenth century until it was banned in 1915. The mostpopular brand of absinthe in the early years was Pernod Fils.
Abisante is a pale green, anise-flavored liqueur that turns opalescent when drippedslowly over ice. It can be used in recipes as a replacement for the outlawed Absinthe.
