Dulcce De Papaya

Dulce de lechosa or papaya is a delicious traditional dessert in Venezuela; it is present in Christmas and also represents part of our culture. It can be prepared during the year but it is common tocelebrate the end of the year; in theory it is a really basic dessert made by papaya and some simple complements, but it doesn’t mean that it is not amazing, it is cooked slowly and being kept inglass jars, also sometimes is given as a present, the recipe has been transmitted from generation to generation and everyone gives it a personal taste. It is composed by papaya, water and sugar or panela(unrefined sugar cane), and is common to flavor it with cloves, vanilla and sometimes cinnamon, which makes a significant balance between the flavors; Some characteristics of this dessert are: thefruit is the most important element, is really juicy, the color and sweetness can vary according to the person who makes it, for that reason sometimes it can be softer than others; also in some regionssuch as: Central, Eastern and also Andean people add other fruits as guava, orange and pineapple.

The origin of this dessert comes from the Spanish colonization; the nuns were preparing them with their recipes and the other woman’s who were helpingthem, learned how to make them, but they modified it with their personal taste, as a result they had created new desserts that became traditional since then. The crisis caused by the First World Warwas a problem for the provision of supplies to Venezuelan ports; such a situation was helpful to incorporate tropical fruits into the desserts, being popular in the twentieth century.
