Ingredients: |
Asian Chicken Salad | 4 cups TFM Rotisserie Chicken |
 | 3 cups finely shredded cabbage |
 | 1 seedless cucumber, chopped |
 | 1 bunch of scallions, green and white parts, chopped diagonally |
| 1 cup cilantro, chopped |
 | 1 small can of Mandarin oranges, drained and chopped |

Dressing  | 1/4 cup reduced-sodium soy sauce |
 | 1/4 cup Justin's Classic Almond Butter, wellstirred |
 | 2 tablespoons water |
 | 2 tablespoons brown sugar (or regular sugar) |
 | 2 tablespoons toasted sesame oil |
 | 2 tablespoons seasoned rice vinegar |
 | 1teaspoon ground ginger |
 | 1 teaspoon red pepper flakes |

Preparation: |
In a large serving bowl, whisk together all dressing ingredients. Toss salad ingredients with dressing in alarge bowl until combined well.Tip: Almond Butter is rich in antioxidants and protein and makes an incredible snack dip. Enjoy it by itself, with sliced apples sprinkled with cinnamon, or with babycarrots for dipping! |
