Empanadas con harina pan
Ingredients:
2 cups of Harina P.A.N.
2 and half cups of water
1 teaspoon full of salt
Mince stewingredients:
Half a Kilo of minced meat
1 onion
1 capsicum
2 ripe tomatoes
1 teaspoon full of salt
Half a teaspoon of cumin powder
Toprepare the minced meat stew:
Finely chop the onion, capsicum and tomatoes.
In a frying pan heat two spoons of olive oil and add choppedingredients.
Add the mince meat, cumin, salt and black pepper to taste.
Mix the stew thoroughly and cook for about 10 minutes.
You maywish to add a bit of cooked rice or potato to the stew.
To prepare the empanadas (turnovers)
In a bowl add the water and salt to taste.Add the Harina P.A.N. over the water (a thieve could be used for this to sprinkle it over).
Mix thoroughly to form a homogeneous doughand rest it for 2 minutes.
Make fist size dough balls.
Over a plastic sheet, Flatten a dough ball to form a circular patty – 10 to 15 cm.Add a spoonful of mince stew and fold the patty to form a turnover.
The empanada (turnover) is now ready to be deep fried till a crispygolden crust is formed in 2 to 3 minutes.
Empanadas are traditionally served with pieces of lime and chillie sauce.
