Experts in animal nutrition are the ones who know about *phytases* and the possibilities offered for poultry feeding. The addition of phytases in the industry feedis increasingly common, because of the economic benefits provided by its use. Nevertheless, unlike other additives foodstuffs such as amino acids and vitamins, in the animal have a power and welldefined requirement, there is still a limited knowledge about relationships between the units analyzed, the doses required and bio efficacy optimal for different enzymatic products.
Enzymes arebiological products that catalyze biochemical reactions related with cellular life and form chemical combinations with one or more substrates. They are high molecular weight proteins and, as the rest, aresensitive to the physical/chemical environment that can modify their activity.
Enzyme can catalyze the reaction of a large amount of substrate in a small period. The fast reaction speed is due to theaffinity of the enzyme for its substrate, which is reflected in the union of both and yield of products. For that an enzyme (E) acts, it is necessary the formation of a complex between it and thesubstrate (S). This complex (ES) is then cleaved, by releasing the products (P) of the reaction and without altering the enzyme: E+S -> ES -> E+P
Enzymes are classified according to the catalyzedreaction type:
* Hydrolases (hydrolysis reactions)
* Isomerases (isomerization)
* Oxidoreductases (oxidation-reduction)
* Transferases (transfer groups functional)
* Lyases (additionto double bonds)
* Ligases (bond formation with split ATP)
