Prologue

Investigations by its scientific rigor are generally classified in: qualitative, quantitative, and qualiquantitatives, among these: descriptive, correlational, quasiexperimental, experimental andapplication. Research studies are not difficult, art and the secret of the research is to deepen about the scientific method as well as daily reading in the creation and Association laxa the application of knowledge in new ways to investigate and innovate, as well as contribute new knowledge to the society with social projection. Because research is creating new knowledge to the subject matter and somehowgenerate research culture.

f the fruits of the species of black cherry as well known by the vernacular Salvadoran, was extracted a dye solvent ethanol, acetone and water a red to purple by hydrolysis method. Selection and extraction of the plant to

obtain the natural dye was made. Family Syzigium entered our country identified him fruit a purple pigment to red. The plantcontains flavonoids, resin, tannin, mineral salts, brown pigment, amygdalin and Gallic acid. The bark, leaves and seeds in contact with water release hydrocyanic acid or hydrogen cyanide (HCN). Found moderate concentrations of hydrocyanic acid (cyanide) more concentration on seeds and leaves, then in smaller quantities in fruit. The plant is imported from the West Indies. The likely species is nativeand adapted to our land from El Salvador to be called the uessalvadorensis of the genre Sysygium, Myrtacea family. Key words: black cherry, natural colorant, flavonoids, hydrocyanic acid, acid.

Introduction.

When artificial dyes or chemicals are giving serious problems in public health, in such a way that the natural dyes are replacingchemicals by harmless abilities and lack of serious side effects. Its disadvantage is that larger amounts of the active ingredient for industrial use unlike synthetics that are produced on a large scale and low cost need. There are also many varieties of plants that are registered and others are native, but which present a risk of toxicity, since many have toxic components, mainly acid hydrocyanic acidthat it is harmful to health and animals. There are also many native species characteristic of the Mesoamerican flora that have not been discovered or presented features typical marked or differential among species, even though they correspond to a family or genus are small details make their structural differences of species.
