A COMPLEXITY SCIENCE APPROACH TO THE SALES RESTAURANT BEHAVIOR IN A GREAT TOURISM HOTEL

Abstract

The tourist industry can be considered as a complex system because it is made up of many elements (tourist companies) that interact with each other in a nonlinear way. In turn, these companies can also be considered as complex systems because their behavior is nonlinear with time, this paperpresents an applied of analysis by a nonlinear mathematical tool called fractal geometry used to characterize the sales of the dynamics of a restaurant hotel in a Great Tourism services (GTs) The purpose of applying this fractal analysis is to characterize the complex factors, that can then be used to improve the services planning in the restaurant services.

Resumen

La industria turística se puede considerar como un sistema complejo, ya que se compone de muchos elementos (empresas turísticas) que interactúan entre sí en una forma no lineal. A su vez, estas empresas también pueden ser considerados como sistemas complejos debido a que su comportamiento es no lineal con el tiempo, este trabajo presenta unaaplicación de análisis de una herramienta matemática no lineal llamada geometría fractal para caracterizar las ventas de la dinámica de un restaurante de un hotel gran turismo (GT) El propósito de la aplicación de este análisis fractal es la caracterización de los factores complejos, utilizados para mejorar la planificación de los servicios en el sector de la restauración.

I. Introduction

Tourism is recognized as one of the largest world level industries [1]. Various countries rely upon their dynamics of the tourism industry to generate revenues [2], employments [3] and infrastructure development [4]. The economic importance of tourist companies resides in the impulse, creationand development of other industries (construction, banking, trade) through the multiplying effect that characterizes the tourism industry and generally stimulates economies [5].

In Mexico tourism contributed with the 8.2% of PIB and generated one of each eleven employees direct and indirect, the hosting services are part of a major economic activity and consists of a total 15,800establishments distributed throughout the national territory with an average occupancy of 51.36 %, one of the most important tourism destination is Mexico City with a total of 657 established [6] the tourism importance is because offered business services segment, defined like the branch of flow which principle travelled motivation is linking with the working and professional activities. Tourism servicescategory are classified according to the physical services and the capacity to cope with a certain demand. A hotel great tourism category must maintain high specialization services identified by the Mexican standard quality NMX-TT-007-1996-IMNC [7] that is the maximum distinction in hotelery services. therefore these services used high technology and an internal process to keep quality services andproduction capacity, however are affected by many elements to come from the internal and external contexts and the natural condition of tourism thus provoke that these companies faced massive changes.

Dealing with the management of hospitality companies is not easy because the world demand of services tends to undergo continuous changes, not only because the preferences of the clients changeconstantly [8], but also because demand is sensitive to critical events [9] related with the personal and social security matters such as terrorist actions [10], war [11] and disease [12] these items form the basis on which the tourist takes his purchase election and constantly affect the macroeconomic values of the phenomenon, meanwhile the seasonal cyclical behavior in the market, the services...
