It's a variety of cactus that is very common in Mexico. Each plant has many large, flat, spiny leaves that are used in many dishes. There are thousands of stands at the festival, each one serving creations made from nopales. You can find soups, salads, nopales stuffed with meat or other vegetables, candy, and even nopal icecream.
