Chapter 6

1. Fats: What are the functions of fat in the body? Know the difference between saturated fat, unsaturated fat(mono and poly), and trans fat (hydrogenation). What types of foods are these fats found in and how do these fats affect the body.
2. Carbohydrates: What is thefunction of carbohydrates in the body? Describe the difference between simple and complex carbohydrates.
3. Proteins: What is the function of protein in the body? What foodscontain protein?
4. Vitamins: Describe antioxidant. Describe the difference between water-soluble and fat-soluble vitamins.
5. Minerals: Only calcium and iron.What is the function of these minerals in the diet? What foods contain calcium and iron? What diseases are associated with these minerals?
6. Describe the categoriescontained in the food guide pyramid and the approximate number of servings for each food category.
7. Identify basic elements in reading a food label (serving size,calories, calories from fat, fats, carbohydrates).
8. Describe diabetes, what are the types of diabetes, what are the health effects of diabetes, how can diabetes beprevented, what foods should a diabetic eat.

9. Understand how to use the Body Mass Index Chart.
10. Identify health problems associated with obesity.11. Indentify healthy methods for reducing obesity.

12. Understand how cholesterol affects the body. Know the difference between lowdensity lipoproteins (LDL’s) and high density lipoproteins (HDL’s). Know what the different cholesterol blood levels mean. Identify lifestyle changes to reduce cholesterol.
