Mezcal
Mezcal is a very exotic and unique alcohol beverage that is only done in Mexico, it possesses a very long history and comes from prehispanic times. Its name comes from the native nahuatls in Mexico who used the term “mezcalli” to refer to the plant mezcal comes from. This tipical and exotic beverage is made from the “maguey” and from the “agave”, types of plants that are found inMexican territory and have a very important cultural and economical importance. There are a lot of beverages that can be done with these plants, but lately none of them has reached the level of quality, popularity and greatness of the mezcal or of the “tequila” which is similar to mezcal. It has a very long and cautious preparation and elaboration, which is the main reason why a good mezcal isexpensive and not so easy to get, this mezcals are made traditionally and its preparation forms part of a very ancient culture. This beverage along with tequila is one of the most artisanal from Mexico and has characterized for having one of the best flavors among all the alcoholic beverages around the world. Mezcal is produced only in the states of Oaxaca, Tamaulipas, Durango and Guerrero, eventhough it is produced in this four states, it is mainly produced and exported by Oaxaca, which has the best “mezcaleras” of all. Mezcal has become a national symbol, since it is worldwide recognized and known to be Mexican by excellence. It has become one of the popular tastes of Mexico also, if you are from other country and you visit Mexico, you have to take a taste of Mezcal since is one of thegreatest drinks you will ever found in Mexico. Mezcal is made by many brands and many companies but no matter by who it´s made the flavor and taste of the true Mezcal is only reached by few, and that is what I consider is artistic about this topic, not everyone can do a Mezcal like it should be, and also how Mezcal represents Mexico in many ways.
Mezcal is the Mexican spiritual beverage byexcellence, it means celebration, party, coexistence, sharing, it helps to reanimate us. Mezcal is part of the soul of Mexico, it means biological diversity and cultural diversity too. Mezcal is richness for Mexico, in any part of the world when you think of Mezcal you think about Mexico. Mezcal, an emblematic beverage from Mexico has reached the most sophisticated places, now you can find it inthe finest restaurants and also in any of the “Mezcalerias” that exist on Mexico. This situation is mostly recent, some years ago finding Mezcal was not an easy task. Mezcal was only served on restaurants where its food was typically and only Mexican, because it was for many years a very underestimated beverage.
Now a days everything that comes from Mexico has revalued, and fortunately isnot a trend, we eat, drink and appreciate from distinct way everything that is made in Mexican territory, and that is one great achievement that Mezcal forms part of. Since ten thousand years ago the “Agaves” or “Magueyes” have been fundamental to the prehispanic people in Mexico, as food, for the extraction of beverages, medicine, soap, for the elaboration of different types of fibers andconstruction materials, fertilizers and fuel. By all that in the sixteenth century, the Jesuit scientific Joseph de Acosta defined the “Agave” as the “Arbol de las Maravillas” (the tree of wonders). “Agaves” belong to a family named “Gavase” which give name to this plant, and they are originally from Mexico, on the northwest. They originated about ten million years ago on this zone and the term“Agave” is from American distribution. Few years ago it was believed that the only alcoholic beverage that the prehispanic people elaborated was the “pulque”, a ferment obtained of the sap (savia) of the “maguey”.
