Have you ever opened a packet of cookies, orbiscuits, and found them in bits? Every year cookie
factories throw away thousands of cookies that come
out of ovens cracked or broken. Thousands more reach
supermarket shelves but then crumble when peopletry to eat them. Scientists now say that crumbling
cookies may have little to do with the way they are
packed or transported. Instead, the problem may bedue to cooking techniques and humidity levels.
When a cookie comes out of the oven, its edges
are usually drier than its center. If the surrounding air
is very humid, the dry edges of the cookie absorb waterfrom the atmosphere. This makes the edges expand.
At the same time, as the center cools, it loses moisture
and contracts. These opposing forces – expansion andcontraction – pull the cookie apart. One researcher
described the process as “an earthquake running
through the biscuit” and causing it to explode.
These research findings suggest a way formanufacturers to solve the broken cookie problem.
By adjusting the humidity levels in factories, they
can make sure the cooling process does not damage
the cookies. Baking cookies at lower temperaturesfor a longer time can also help. If they work, these
recommendations could significantly reduce the costs
of manufacturing cookies.
