Basic Cupcake Recipe
To make 12 cupcakes
125g Plain Flour
125g Caster Sugar
125g Stork Margarine
1.5 tsp baking powder
1.5 tsp vanillaessence
Pre-heat oven to 155C
If using a stand mixer or magimix then simply put all ingredients in together and mix for approx 1 minuteuntil all the ingredients are well combined.
If mixing by hand:
Cream together the butter and sugar
Add the eggs and mix
Add the vanillaessence
Stir the [sifted] flour and baking powder in using a metal spoon
Prepare you cake tin (preferably a deep muffin tray) with your chosencake cases
For flat cupcakes fill no higher than half way
If you want a peak then fill no higher than ¾ full
A good way to fill the cases isto use an ice-cream scoop so that you know you have the same amount in each case
Bake in the pre-heated oven for 17 minutes (to test if theyare cooked you can insert a cocktail stick into the middle and if it comes out clean then the cupcake is ready!)
Please note though that everyoven is different and you may have to experiment with oven temperature and baking time until you are 100% happy with the results.
Buttercream250g unsalted butter, softened
500g icing sugar
1tsp vanilla (optional)
1 tbsp milk or water
Cream the butter until it is pale
Gradually mixin the sifted icing sugar
Add vanilla if desired.
Slowly mix in milk or water until you have the desired consistency
