Gummy Candies Production
INTRODUCTION
Hello! I am Victoria Amengual and I am Vanesa Lare.Today, we’re going to talk about Gummy Candies production. We are going to divide our presentation into three sections: the introduction, the description of the process and, finally, the conclusion. Tostart, it is important to define Gummy Candy and Gelatin. Gummy candy is a unique candy composed of gelatin, sweeteners, flavorings, and colorings, first developed in Germany in the early 20th century.Gelatin is a protein derived from animal tissue that forms thick solutions or gels when placed in water.

GUMMY CANDIES PRODUCTION
As you can see, this is a flow chart of the process. Gummymanufacturing uses a starch molding process. First the candy is made, and then it is filled into starched lined trays. The filled trays are then cooled and the resulting formed candy is emptied from thetrays.

BOILING
The gummy candies production begins with boiling. Glucose-fructose syrup, saccharose and water are mixed and boiled. Because of the high temperature the sugar melts and becomes a syrupymass together with the water and the glucose-fructose syrup. The more water the syrup contains the softer the gummy candy will be.

MIXING
Then, starch, gelling agent such as gelatin, acidityregulators, coloring agents, flavoring agents and aromas are mixed with the warm mass. The starch and the gelatin determine the structure and firmness of the candy. Also, the gelling agent determines theelasticity. Acidity regulators are added to give the gummy candy a fresher taste. The coloring agents, flavoring agents and aromas are added to give the candy its wanted color, flavor and smell.Before the addition of these ingredients, the mass has to be tempered.

CASTING
Next, the mixture can be cast into shapes. Due to the blending the mixture has already cooled down a lot, but not too...
