Resumen ejecutivo

El objetivo principal del presente trabajo es elaborar hamburguesa con 100% carne de Alpaca.
Se desarrolló un análisis microbiológico de la materia prima obteniendo resultadospositivos lo que conllevó a revisar el proceso de sacrificio y faenado descubriendo que un punto crítico es la extracción de la carne de alpaca, realizando los estudios necesarios para el consumo humano, teniendo en cuenta que este tipo de carne es diurético.
Poco a poco van apareciendo restaurantes que atienden a nuestra necesidad de comer rápido pero sin renunciar a una alimentación saludable; poresta necesidad insatisfecha de la población nace INKABURGUER brindando hamburguesas de de carne de alpaca de primera.
Por lo expuesto y teniendo como sustento el resultado de las encuestas realizadas entre los usuarios de los distritos de Huancayo, El Tambo y Chilca, los habitantes de los citados distritos, quienes en un 90% manifestaron su interés de recurrir al servicio propuesto,INKABURGUER, que estará ubicado en el Distrito de Huancayo.
Orientado a un segmento socioeconómico A, B, el objetivo inmediato del servicio de la venta de hamburguesas de carne de alpaca y así brindar comida sana y a gusto del consumidor.
Los resultados de la evaluación financiera nos indican que el proyecto tiene viabilidad financiera según el VAN, TIR B/C y PRI. INKABURGUER contará con modernainfraestructura y equipamiento de primera; se forjará una marca de prestigio, considerando que no existe otra oferta de servicio de estas características. Al inicio de las operaciones tendremos baja participación en el mercado, altos costos de operación y con endeudamiento financiero. En cuanto a oportunidades, consideremos la mejora de la capacidad adquisitiva de la población y la posibilidadde que aumente la cultura por la alimentación sana nos ayudarán a permanecer y crecer dentro y fuera de nuestra región.



Executive Summary

The main objective of the present work is to develop burger with 100% Alpaca meat.
Development is a microbiological analysis of the raw material getting results
Positive what led to review the process of slaughter and dressing discovering that acritical point is the removal of the alpaca meat, by performing the necessary studies for human consumption, taking into account that this type of meat is diuretic.
Little by little they were appearing restaurants that cater to our need to eat fast, but without giving up a healthy diet; by this unmet need of the population is born INKABURGUER providing burgers of alpaca meat first.
For theforegoing reasons and taking as a basis the results of the surveys conducted among users of the districts of Huancayo, the Tambo and Chilca, the inhabitants of these districts, who in a 90% expressed interest in having recourse to the proposed service, INKABURGUER, which will be located in the District of Huancayo.
Oriented to a socio-economic segment A, B, the immediate objective of the servicefrom the sale of beef patties of alpaca and also to provide healthy food and consumer taste.
The results of the financial assessment we indicate that the project has financial viability according to the VAN, TIR B/C and PRI. INKABURGUER will have modern infrastructure and equipment of first; will be forged a mark of prestige, considering that there is another service offering of these features....
