Introducción
mermelada
Se entiende por mermelada de piña al producto alimenticio obtenido por la cocción y concentración del jugo y de pulpa de piñas (Ananas sativus en sus variedades aptas para el producto) sanas, limpias y con el grado de madurez adecuado ya sean frescas o conservadas. Libres de ojos o partículas de la cascara, adicionada deedulcorantes nutritivos y agua adicionada o no de ingredientes opcionales (véase 5.6) y aditivos permitidos, envasada en recipientes herméticamente cerrados y procesados térmicamente para asegurar su conservación.

Clasificación
El producto objeto de esta Norma se clasifica en dos tipos de acuerdo al tamaño de la fruta suspendida con un sólo grado de calidad.
