El cobre es un elemento esencial para el hombre (6,8, 9). Interviene en el desarrollo de los huesos y del tejido elástico, en el funcionamiento del sistema nervioso central.Las recomendaciones diarias se estiman en 2 mg (8,10). Dada su gran distribución, es prácticamente imposible preparar unadieta que contenga menos de esta cantidad (6, 9)
Entre los alimentos más ricos en cobre se encuentran las ostras, hígados, setas, nueces y chocolate (6). Además, el contenido de este metal puedeaumentar por la cesión de cerámicas y utensilios domésticos (15).
El agua de bebida contiene generalmente 0,1 mg/L. Si se acepta esta concentración como típica en el agua potable, ésta podríacontribuir a la nutrición entre un 6 y un 10% de las necesidades diarias de cobre.
