For more than 5,000 years, ginger has played a role in human food and medicine. It is generally agreed that it was first used in the southern provinces of China. Early explorers tooksamples abroad to cultivate it in Indonesia, West Africa and later, with the discovery of America, to the West Indies and Central America. However, thanks to the Romans - who used it more in medicine thangastronomy - it was adopted widely in Europe where Roman legions marched, including Britain, where during medieval times, it was as common as pepper. During that same period, the English beganimporting preserved ginger as a sweetmeat. (…)

Ginger is known in its wild state. The ginger we know today is the species Zingiber officinale, whose rhizomes are usually consumed fresh in those areas whereit is cultivated, and dried for use in those places where it is not cultivated.

The main world producer of Ginger is India, which accounts for about half the world supply. Other importantproducers are Jamaica, China, Taiwan, Thailand and Nigeria. In the southern hemisphere, Australia is starting to enter the preserved ginger market in a fairly important way. (The small Queensland’s town ofBuderim was the first ginger producer there and its high quality is recognized on world markets).
