RESUMEN

La producción de café en la zona montañosa central de Veracruz ostenta ampliarelevancia tanto en el plano económico como social. El trabajo se centra en las características del grano de café que podrían aprovecharse, junto con otras estrategias para incrementar su consumo. Por esta razón se realizó un análisis de las estadísticas de oferta y demanda para el café consumido en el país, en sus presentaciones tostado y molido así como soluble. Se evaluó el efecto de lasustitución hacia el consumo de bebidas gaseosas; el nivel de aprovechamiento del crecimiento poblacional; así como la variación esperada en la producción del café en México, ante cambios en los ingresos de los estratos socioeconómicos alto, medio y bajo. Para la generación de un modelo de regresión uniecuacional, se trabajó con series de tiempo para el periodo (2000-2014) (. El cálculo de losestimadores y de las pruebas de multicolinealidad, heteroscedasticidad, autocorrelación, normalidad de las perturbaciones, se realizaron con el auxilio del paquete econométrico Eviews 3.1. La información obtenida permite identificar el segmento de la población que plantea reacciones positivas hacia el consumo ante el aumento en el ingreso, así como identificar que el crecimiento poblacional y de hogares noha sido aprovechado para captar nuevos consumidores de café. En donde la elasticidad precio promedio de la demanda para el periodo de estudio fue inelástica ya que el incremento porcentual en la cantidad demandada es menor al incremento porcentual en el precio. Se concluye que existe una relación inversa entre el precio y el consumo, ya que a mayor precio menor es la cantidad demandada delgrano. 







ABSTRAC

The production of coffee in the central higlands of Veracruz shows wide relevancy so much in the economic as social plane. The work centers on the characteristics of the coffee bean of that they might take advantage, together with other strategies to increase his consumption. For this reason there was realized an analysis of the statistics of offer and demand for the coffeeconsumed in the country, in his presentations toasted and ground as well as soluble. The effect of the substitution was evaluated towards the consumption of gaseous drinks; the level of utilization of the population growth; as well as the variation waited in the production of the coffee in Mexico, before changes in the income of the socioeconomic strata high, average and low. For the generation of amodel of regression, one worked with series of time for the period (2000-2014). The calculation of the esteeming ones and of the tests of seasonal variation, of normality of the disturbances; there was realized by the aid of the Eviews 3.1 econometrics software.
