The term Mesoamerica, which means “middle America” -in Greek, was developed by Walter Lehmann in 1920 and by the German ethnologist, Paul Kirchhoff during the 40’s. They described them as a “largearea of interaction with a basic cultural unity” . This cultural area is extended from Central Mexico to the Central American countries of Belize, Guatemala, and El Salvador. And their primariesgroups were constituted by the Mayans, Aztecs, and Olmecs. Mesoamerica in general was considered as a rich region to practice the agriculture or farming of its plants and herbs. This activity waswell-resolved by the Aztecs’ civilization. For this reason, the Aztecs find themselves as farmers, traders, and the ones who brought some agricultural innovations to the agronomy from those ages.Agriculture was in fact the main economic activity of the Aztecs. The basis of their feeding was especially maize and the beans of cacao. Maize got a large complex of dishes to be prepared with it. Therefore,one of the typical derivations of the maize we can find it in the tortillas. The Indinas used to call them atolli, and they used to served them in many different variations. For example, “Maize gruelwith honey; or with chili and honey; or with yellow chili” (79). Another variation of how they used to consume the tortilla is giving by the author of the book of The Aztecs, Richard Townsend, whenhe implied that “… maize was cooked as a dough… and that one was wrapped in corn-husk tamales with a piece of meat or another flavoring”(172)
At mid- summer they have a festival to honor the maize,because they think that the maize was given by God, and it was a highly honored by all Aztecs society.
The Aztec had also cultivated some other important crops that were essential for their diet, likebeans, very rich in protein, the chia ( Salvia), several varieties of fruit trees, squash, tomatoes, and chili peppers. Cacao and cotton were also farmed by them. This was cultivated in “the...
