Food transported across countries burns up a lotof fossil fuel and contributes to global warming. Food miles has become accepted as an indicator of sustainability; and has led to a general movements toward local production and local consumptionin order to minimize them.
Thinking in all this facts the idea of creating the “slow food” movement came. “Slow food” is an international association created in 1986 by an Italian mannamed Carlo Petrini.This movement has created a big line of restaurant s and now at days is in 104 countries of 5 continents.The representive symbol is a snail because as this particular animalthe project is walking slow but he enjoys in a delightful way his life.
“Slow Food” has an specific guide for all the zero kilometers restaurants.The majority of the ingredients are buyeddirectly from local producers and the rest have an specific ecological certification.In that way you consume products of first quality and you contribute being sustanainable. kilometer 0 cuisineoffered by some restaurants are under certain fundamental premises:buy food directly from the producers in a radius of less than 100 kilometres, products that can be purchased are mainly organicand are equipped with the corresponding certification . To get a restaurant with a kilometer 0 category by the Slow Food movement, you must have in your menu with a minimum of five dishes withingredients that meet the requirements ,but also add the fact that the rest of ingredients used in the kitchen have been obtained in a sustainable way. of course transgenic food have no place in these...
