Escherichia Coli, Bacteria Indicadora De Manipulación Incorrecta En Muestras De Alimentos

ABSTRACT: Escherichia coli (e. coli) are bacteria thatnormally live in the intestines of people and animals. Bacteria are transmitted to humans mainly by consumption of contaminated food, such as raw or undercooked ground beef products, milk, raw, andvegetables and contaminated raw germinated seeds. Biochemical tests consist of several test chemicals applied to biological media, which, known its reaction, allow us to identify different organisms. Theobjective of this study is to observe led food sample to analyze and identify with proofs of identification, and using the Gram stain if the E. Coli is adequately interpret the results delivered bythe tests. After 8 days of samples (boxes of Petri dishes with Agar Endo), having left in the incubator, which allows the bacteria have an optimum temperature for growth, different colonies waslikewise subdivided according to their macroscopic and microscopic morphology. On the basis of results, it was concluded that each colony found and sampled to find E. Coli were gram-negative and shapedbacilli which was made with the BBL Crystal test analysis.
INTRODUCCIÓN: La Escherichia Coli es la especie bacteriana más común de la microbiota intestinal; se presenta como un comensal del intestinohumano pocas horas después del nacimiento (Iguchi et al., 2009).
En condiciones naturales, las bacterias se desarrollan en diferentes hábitats y frecuentemente en poblaciones mezcladas junto a otros seresvivos (Juares, 2002). El tamaño promedio de los bacilos es de 0.5 µ de ancho por 3 µ de largo; sin embargo en el caso de las bacterias estas pueden ser observadas mediante métodos de tinción quepermitan su reconocimiento en el microscopio, cuando se utiliza la tinción de Gram se tiñen de rojo (Gram-negativas) (Juares 2002).
