The Chef's hat

Several stories are told about the origin of the Chef hat. Perhaps the most colorful is that English monarch Henry VIII's chef was going bald and one of his hairs accidentally fell into the king's soup. Some say thechef's hat can be traced back to the seventh century A.D., when chefs were considered learned men (remember that "epicurean" derives from the name of a Greek philosopher, Epicurus). Learned men didn't always get the respect they deserved, and were often persecuted; at such times, they often took refuge in the local church, where they donned the same costumes that the local clergy were wearing,hats and all, as a disguise.

The other most prominent story about the chef's hat is that it comes to us from the ancient Assyrians. Since one of the more common ways to kill a king back then was to poison his food (not to mention the fact that spoiled food was very common in those days), chefs were chosen carefully, and treated very well, often even holdingrank in the king's court. Legend has it that the chef's high position entitled him to wear a "crown" of sorts, in the same shape as the king's, though made out of cloth and without all the jewels.

Over theyears, Chef hats varied widely from country to country, in material, style, and color. What many consider the traditional Chef hat was made of white cloth, tall, and stiffened by starch or a cardboard insert. The top part was flat or puffed out to varying degrees. The height of the hat often signified the importance of the chef - the taller the hat, the more senior the chef. Also, vertical pleatswere added, the more pleats in a hat, the more ways the chef knew how to prepare eggs. Hats with 100 pleats were the norm among experienced chefs.
