1 What should Ferran Adria and the elBulli team do next?
Ferran Adria had a few good ideas for „saving“ his philosophy after his restaurant came to close: The hotel, consulting, the books and catalouges. However, in my opinion it would be a dissiption not to offer the special meals of the elBulli team.Adria just said:
“ I recently saw a TV interview about the American Express Centurion Card. It said that you can have access to anything that can be purchased in this world. But it made me laugh. There is one thing that you cannot purchase: a reservation at elBulli. What would be the normal thing to do? Raise prices. It should be 600 €. But I do not cook for millionaires, I cook for sensitivepeople.“
For me it sounds like a claim addressed to himself. A claim to make something different but without changing the philosophy of creativity. For more people he wants to make it possible to eat the elBulli creations, to offer them a amazing meal to a reasonable price with profit.
One solution could be the restaurantsystem of Vapiano. The idea is very simple. The clients can choose froma few different italian meals witch will be prepared just in sequenze in front of their eyes. So for Ferran it would be possible to create for example every week or month a new menue. Therefore he cannot keep his kind of service, it cannot be a celebration like in the elBulli restaurant. But it would be possible for him offer is menues for more people at more places, so that not only a few peoplein the year could enjoy his meals.
A solution between gourmet and fast-food.
2 Can the elBulli philosophy be applied to potato chips?
In my opinion it is difficult to apply the elBulli philosophy to potato chips, because potato chips are a product with a constant flavor. There are many different flavors,but they are almost taste similar: cheese, paprika and some other spicery. Somecompanys also have special flavors like currywurst, however it depends on the country, where the chips are selled, Indian people woudn´t like a potato chips which taste of currywurst, they would prefere something like ...... . If elBulli want to applie the philosophy to chips and sell them on a grand scale, like the others companys in the chips business, they can´t keep the philosophy. However, thereare some aspects which speak in favor, that is possible for a specific group of clients to create a new kind of potato chips with the elBulli philosophy.But therefore you have to forget the known chips, which is in terms of the elBulli team.
For example there is a market for healthy snack, so it would be possible to create potato chips made of fruits or vegetables. Just as well the elBulliteam could create icecream, choclate or what else, which taste as potato chips.
From my point of view this is one possibility to applie the elBulli philosophy to potato chips, but then elBulli potatochips aren´t potato chips, which are familiar to the clientes.
So elBulli potato chips could be made for a specific target group but not for the known target group!
3 Fast food?
Apply theelBulli philosophy to the Fast Food sector appears to be much easier, since Fast Food only has one claime, it has to be quick.
Adding qourmet ingredientes to traditional fast-food items, for example currywurst with gold plate on top and fries made out off truffle. Equally you can offer it the other way around, so prepere known fast-food like hamburger in a new way ( like the spain omlette...
