En la búsqueda de la satisfacción de las necesidades de las personas con limitaciones alimenticias, como lo son los celiacos, se plantea la creación de una empresa dedicada a la producción y comercialización de harina, galletas y pan libres gluten con el fin de atender a una parte de la sociedad que con el transcurso del tiempo ha ido aumentando y que ha sido ignorada por la falta deconocimiento de dicha enfermedad. La realización de la presente investigación se basó en la elaboración de un estudio de factibilidad para crear una empresa de alimentos sin gluten en el Eje Occidental del Estado Carabobo, para lograrlo se definió una muestra 684 personas celiacas las cuales tienen tendencias y actitudes en la dieta alimenticia de estas personas. El resultado más importante de estainvestigación fue la factibilidad del proyecto, la cual se determinó mediante los resultados del estudio de mercado donde se estudiaron las características del mismo como precio, descripción del producto, etc.
El tipo de investigación que se utilizó fue de campo, porque se estudiaron las variables a través de encuestas de forma directa que describen la realidad de las preferencias de lamuestra, documental debido a que fue necesaria la consulta de textos, artículos de revistas y documentos en internet para así poder sustentar la investigación

In the search of suffice the people’s need in terms of food limitations, like Celiac persons, the creation of an enterprise committed to the production and selling of bread made of flour with no gluten with the purpose of attending to a part of the society who, through the time, had been growing and ignored as a result of the of informationabout the disease. The realization of this research is based on the elaboration of a feasibility study to create an enterprise of food without gluten in West axis, to obtain the results; a group of 684 persons were selected to answer a test in which the tendency and attitudes of the daily diet were known. The most important result of the investigation was the feasibility of this project, whichwas determined by the results of the market research where the characteristics like price, description of the product, and more were studied. Later a technical study was done, according to the localization of the enterprise and the internal distribution, finally a financial economic study was made to determine the final investment of the project, the benefit of the investment and the enterprise...
